Jamie’s Bold & Spicy Elk Chili is a campfire classic and a staple among our crew during deer season. This hearty recipe is easy to make, packed with rich flavor, and feeds a whole hunting party.

Jamie’s Bold & Spicy Elk Chili Recipe
- Bold & Spicy Chili
- Servings: 6
- Total Time: ~35 minutes
- Best Served: Hot
Ingredients
- 1 lb ground meat of choice- elk, venison, buffalo, beef, turkey, and chicken all work great!
- 1 lb spicy breakfast sausage
- 1 yellow onion, diced
- 2 (15 oz) cans Ranch Style Beans (do not drain)
- 1 (10 oz) can Rotel (original or spicy) (do not drain)
- 1 (14.5 oz) can fire-roasted diced tomatoes (do not drain)
- 1 packet chili seasoning mix (mild or spicy)
- 1.75 liter bottle Bloody Mary mix (bold and spicy)
- Salt & pepper, to taste
Instructions
- Brown the Meat:
- In a large skillet, brown the venison and spicy sausage over medium heat. Season with salt and pepper to taste.
- Add diced onion and sauté until softened. Drain excess grease if necessary.
- Combine & Simmer:
- In a large pot or Dutch oven, combine the cooked meat/onion mixture with:
- Ranch Style Beans (undrained)
- Rotel (undrained)
- Fire-roasted tomatoes (undrained)
- Chili seasoning packet
- Bloody Mary mix
- In a large pot or Dutch oven, combine the cooked meat/onion mixture with:
- Stir to combine and bring to a simmer. Heat through for 15–20 minutes, stirring occasionally.
Serving Suggestions
- Top with shredded cheddar cheese, sour cream, and chopped green onions
- Serve with crackers, cornbread, or use it for Frito pies or chili dogs
- For extra flavor, allow the pot to sit in your refrigerator overnight before you heat it.
